Regarding the escalators, it was probably thought more important (perhaps even mandated by law?) to have a wider staircase, and, if that is the space that was allocated to this function, there wouldn't have been enough room for wider escalators.

I doubt this was on anyone's mind, but having a single person escalator also eliminates the ability to pass stationary riders by walking up or down past them. People who don't live in crowded urban areas and/or don't use escalators much and/or have come to NYC from another place with another culture, often don't understand the often unstated, but very real "Stand to the right, walk to the left" rule and can get confused and pissed off when riders in a hurry brush past them on a moving escalator. I've seen it happen. And these are long escalators where it would be very tempting for impatient riders to just start walking up or down and possibly getting into an altercation with another patron on the way. This set up avoids all that.
